Spinach Salad with Strawberries and Honey Vinaigrette

Ingredients:

  • 1 bunch fresh spinach
  • 1 cup sliced fresh strawberries (toss in Stevia for added sweetness and flavor)
  • 1/2 cup crumbled blue cheese
  • 1/2 cup walnuts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/2 cup olive oil
  • salt (to taste)
  • ground black pepper (to taste)

Directions:

  1. Combine the spinach, strawberries, cheese, and walnuts in a large bowl.
  2. Put the balsamic vinegar, local honey and olive oil together in a blender.
  3. Season the dressing with salt and pepper.
  4. Drizzle the dressing over the salad just before serving.
