Enjoy a bite of summer’s freshest flavors with this beautiful, delicious, mixed side salad that is loaded with nutrition. Farro is an ancient grain with a nutty flavor and chewy texture. It’s high in protein, fiber and several nutrients. It’s an excellent source of protein, fiber, magnesium, zinc and B vitamins. It’s great news for vegetarians, and those desiring a plant-based, high-protein food.
Tomatoes are loaded with vitamins and minerals including vitamin C, vitamin A, vitamin K, and potassium. Tomatoes are heart healthy and help prevent cancer.
1 c. quick cooking farro
3 tbsp. olive oil
2 tbsp. red wine vinegar
1 clove garlic, pressed
1/2 tsp. ground cumin
1/2 tsp. coriander
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. crushed red pepper
1/2 small red onion, finely chopped
1 lb. mixed-size and -color tomatoes, cut into pieces
2 small seedless cucumbers, cut into pieces
1/2 c. parsley leaves
Cook quick cooking farro per package directions. Meanwhile, in a large bowl, whisk together olive oil, red wine vinegar, garlic, ground cumin, coriander, salt, pepper, and crushed red pepper.
Stir in small red onion, then toss with mixed-size and -color tomatoes and seedless cucumbers. Fold in cooked farro and parsley leaves.
